Already in ancient times vinegar was produced and used. Sour fruit juices, wine and beer were the basis. Mixed with water, it became a popular cooling drink. Partly drinking water was only edible by the addition of vinegar because contaminated water was often use. In medicine for indigestion, respiratory diseases, disinfection of humans and equipment vinegar was used as well as in cosmetics. Today, vinegar is used as a preservative, seasoning or special finishing for salad and other food.
