Honey and consistency
Honey contains natural sugars, mainly fructose and glucose, which are responsible for the "sweetness". Depending on the composition, in any natural honey the sugar, sooner or later, crystallizes more or less. This is a natural process, at least a sign of quality, because these honeys were not heated. The beekeeper influences development and consistency of the honey by processing. Honey tasted differently in the various forms of sugar crystallization. Honey could be more liquid or creamier. And the difference between both versions is not only to put it easier on a bread. The taste is different.
