Olives, a stone fruit, are harvested. From the olives you get olive oil which is extracted (about 90% of the harvest) or olives in green to violet or black. The fruit must be watered and inserted in a pickled fluid, because of its bitterness in its raw condition. Genuine dark olives (black / violet) are late harvested and rather rare.
