Storage of Olive Oil
Olive oil should be stored in well-sealed dark containers in a dark and cool place. Like wine, it is a natural product whose enemy is sunlight (UV radiation), oxygen and contamination. You should therefore store larger quantities / containers like wine and refill small quantities into a carafe or jug for daily use in the kitchen or while eating. Their storage determines the durability of the oil. Taste and odor changes are very easy to identify and allow for the sorting out of defective products.
